What a great
4 hours. Samia and her side kick Eddy provided not only a wonderful
8 courses from soup through to a chile icecream which was weird
but nice.
This
isnt a hands on course but it is as close as you can get with
the lay out of the kitchen and the Q and A with the chef.
No
curries were cooked, however I would happily try all of the dishes
she showed all be it with perhaps less chillia action.
Its a pity
my fridge isnt bigger at home so I can jam it full of nice herbs
to be able to wizz up some of the great things we learnt.
This
is also a great couples thing as the cooking isnt difficult at
all and you get a yummy 8 course feed out of it at the end. The
chef also spends some time with you whilst finishing the food
so you can ask questions.
I would
highly recommend this even if its just to watch the comedy between
the chef and Eddy her able side kick....Eddy do this...Eddy do
that...Eddy why is the oven at this temp etc hilarious!
Looking
forward to the black pepper crab course now.....

After
reading TA we booked as a
group of 4 to attend the
Cooking Classes. One of our
trip highlights, we had a great time
learnt a lot and loved the food.
Very informal Samia put you at ease
and was happy to answer questions,
during the demonstrations.
She also sat with us
over coffee and a chat
what an intersting person.
Staff were very well trained
someone noticed that I was cold
and bought me a shawl
for my shoulders. Water was kept
topped up, tea and coffee
replenished. Wished we had the time
to also eat at the restaraunt.

My
husband and I attended the Thai II cooking class on January
30, 2013 while vacationing in Singapore, after deciding to do
something completely different. WOW, what a truly unique
and very inspiring class. Chef Samia was every bit the professional.
An extremely talented and entertaining chef and teacher!
We enjoyed every aspect of the preparation and cooking as well
as the final sit down meal with insightful conversation with
Chef Samia.. We absolutely cannot wait to re create all these
wonderful dishes with friends and family in our own kitchen.
This was one of the highlights of our trip and one we will always
fondly remember. Thank you Chef Samia for an amazing adventure
into the world of Thai cooking

"Lots of fun - highly recommended
-
Fantastic cooking class with magnificent food!... The class
is an observation class with snippets of taste testing as you
go along but the final food presentation and platters that you
get to devour at the end were worth the wait.
The
idea of watching instead of a 'hands on' approach means that
you get to experience many more dishes in a more systematic
way. Samia was a wonderful host and a fun chef. I don't think
the experience would have been nearly as good if she was not
in centre stage with her entertaining dry sense of humour. Have
already booked to return!!!"

"Learning
from a Master Chef -
This was an absolutely marvelous experience.
Samia is both a brilliant chef and brilliant, utterly charming
teacher. My husband and I took Singapore Classics with
dishes like pepper crab, boon hee, chicken w dried red pepper,
spring rolls.
At first we were a little wary that it was a demonstration course
rather than hands on but it's extremely interactive and you
learn so much: technique, tools, variations, shopping advice,
culture.
You're constantly trying things like 3 kinds of palm
sugar (Thai, Indonesian and Indian) and learning the differences.
The meal is spectacular and huge. The mix of students
(13 in all) was great - business travelers w a free Sat morning,
tourists, expats, and native Singaporeans.
I can't recommend this more highly. We will definitely try her
two restaurants, this one and Screening Room." - 'extrapagespassport',

“Double thumbs up!!-
I have taken 3 cooking classes and definitely want to take more
when time permits.
I took away so many cooking techniques it was so much
more than a cooking class. More of a lifestyle change. Food
was not just excellent but very unique and from all over the
world.
Samia was so incredibly hospitable and inspiring!!"

“Went
for a cooking class - really enjoyed it”
We ate here as part of a three hour cooking class, and really
enjoyed it. When we were planning our trip to Singapore, we
had decided learning to cook some Asian inspired food would
be good fun, but we struggled to find places that did classes.
I initially was reluctant to sign up at the Coriander Leaf,
since the class was a demonstration, and I would generally have
preferred hands on, but as it turned out, it was not a problem.
The
head chef did the demo, and she was fantastic. Did a great job
explaining each step of preparing the dishes (she cooked 7 things),
and also spent plenty of time talking about how to use Asian
spices etc. I learnt a lot.
I also liked her assistant, who was very funny, and also gave
some of his input which was great, since he was a Singaporean,
whereas the head chef is Pakistani (though she has lived around
the world), so we got a different slant on things.
After
the demo, we sat down as a group to eat the food, and it was
stellar. I would have liked to eat in the restaurant following
this, but was unable to find a time to suit.
